Easy Peasy Lemon Bars

For Crust:
  1. 1 cup all -purpose flour
  2. ⅓ cup sugar
  3. ¼ cup softened unsalted butter
  4. ⅛ tsp. salt 
For Filling:
  1. 3 eggs
  2. 1 egg yolk
  3. ½ cup freshly squeezed lemon juice
  4. ½ cup sugar
  5. ⅓ cup  all- purpose flour
  6. 2-3 tbsp. lemon zest

  1. Preheat oven to 350°F.
  2. Combine crust ingredients using a pastry cutter or two forks, until a consistent crumbly texture forms. 
  3. Press the crust into a square baking dish (sprayed with cooking spray) and bake for 10-12 minutes, until lightly golden brown. Set aside and allow to cool slightly.
  4. Combine all filling ingredients, whisking to combine thoroughly. Pour on top of your slightly cooled crust.
  5. Return to the oven for 15–20 minutes, until the filling has gelled and is cooked through.
  6. Allow to cool completely before slicing and dusting with powdered sugar.
