Soft & Chewy Lemon Cookies

Ingredients:

2 cups all-purpose flour
1 cup white sugar
¾ cup butter
1 tsp lemon zest
1 teaspoon lemon juice
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
2 tablespoon corn syrup


Directions:

In a large bowl add butter, sugar, corn syrup and the egg mix until light and fluffy.
Add lemon zest, lemon juice and mix until combined. Mix all the dry ingredients together then add to wet ingredients and mix until well combined.
Cover dough and refrigerate for 1 hour. Preheat oven 325 F. use a 1/4 cup cookie scoop and place cookies 2 inches apart on parchment lined cookie sheet. Place the cookies in the oven and bake the cookies for 15 minutes. Let the cookies cool for 3 minutes on the cookie sheet then place the cookies on a cooling rack to cool completely. Enjoy!
