3 oz. unsweetened chocolate
1 1/2 cups bitter sweet chocolate chips
7 tbsp. unsalted butter
3 large eggs at room temperature
1 cup sugar
2 tsp. coffee powder
2 tsp. pure vanilla extract
1/2 cup all- purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups semisweet chocolate chips
Preheat oven to 350 F.
Melt unsweetened chocolate, bitter sweet chocolate chips, and butter over double broiler until completely melted about 5 mins. then set aside to cool a bit. Mix together coffee and vanilla until combined. In a bowl whisk dry ingredients together.
Beat eggs and sugar together for 4 mins. on medium - high until pale and thick. Now add coffee mixture to egg mixture and beat on med- high for 20 seconds. Add chocolate mixture and beat on low for 30 seconds. Now carefully with spatula fold in flour mixture and chocolate chips just until combined. Now cover bowl with plastic wrap and let cookie dough sit at room temperature for 30 mins. on the table. Using tbsp. scoop scoop cookies on parchment- lined cookie sheets and bake cookies for 11- 16 mins. Leave cookies to cool completely on baking trays for 30 mins. then enjoy.
