Ingredients:
1 1/4 cups all- purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1 stick unsalted butter, at room temperature
1/2 cup light brown sugar
1/2 cup granulated sugar
1 egg, at room temperature
1/2 tsp. pure vanilla extract
1 1/3 cups flaked coconut
Preheat oven to 350 F. In a large bowl add flour, salt and baking soda stir until blended and set aside.
In another large bowl add butter, brown sugar, white sugar, vanilla and egg and mix until combined.
Gradually add flour and coconut until completely combined. Drop by rounded tsp. fuls and place on cookie sheets 2 inches apart. Bake the cookies for 8 to 10 minutes in a preheated oven or until lightly toasted. Cool completely on racks.
