Ingredients:
2 sticks unsalted butter, at room temperature
3/4 cup light brown sugar
1/2 cup granulated sugar
1 tsp. pure vanilla extract
1 tsp. pure strawberry extract
1 whole egg
1 egg yolk
2 1/4 cups all- purpose flour
1/4 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
3 cups old- fashioned oats
2 cups dark chocolate chips
1 1/2 cups fresh strawberries, hulled & chopped
Directions:
Preheat oven to 350 F. Line cookie sheets with parchment paper. In a large bowl add the butter, sugars, extracts and eggs and mix well with a hand mixer. In another large bowl add flour, baking soda, baking powder,salt,and cinnamon now whisk together until well combined. Add the dry ingredients to the creamed ingredients. Now stir in oats, chocolate chips and chopped strawberries. Drop dough by rounded tbsp.fuls and place on parchment lined baking sheets 2 inches and bake 10 to 12 minutes. Let cool on cookie sheets 3 minutes before moving to a cooling rack to cool completely. Enjoy!
