Cream Cheese Bundt Cake




This cake is very easy to make and it taste so good my family loved it.

Ingredients:

3 sticks unsalted butter, at room temp.
3 cups granulated sugar, sifted
1 pkg. cream cheese, at room temp.
6 large eggs, at room temp.
2 tbsp. pure vanilla extract
1/2 cup fresh lemon juice
1 tbsp. lemon zest
1/2 tsp. salt
3 cups all-purpose flour, sifted

Glaze:

2 cups confectioners sugar, sifted
4 tbsp. unsalted butter, at room temp.
2 tbsp. fresh lemon juice


Directions:

Preheat oven to 325 F. Spray 12 cup bundt pan with bakers spray.
Set aside. In a large bowl sift together the flour and salt. Set aside.
In another large bowl cream together the butter and cream cheese
until combined about 5 mins. add in the sugar and cream together
with the butter mixture for 7 mins. until light in color and fluffy.
Add in vanilla,lemon juice and lemon zest. Add the flour mixture
1 cup at a time to the creamed mixture mix until just combine.
Batter will be thick. Now Put this batter into the prepared pan
and smooth over top of cake and bang the pan on the counter 8 times
to get rid of any air bubbles. Place into the preheated oven and bake for
 1 hour and 20 minutes or until done. Cool in pan for 10 mins. flip out
onto a cooling rack to cool completely then glaze if desired. Enjoy!
