Ingredients:
1- 14 3/4 oz. can Deming's Pink Salmon, drain of juice
1 egg, slightly beaten
1/2 tsp. seasoned salt
1/2 tsp. black pepper
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. red pepper flakes
1/4 tsp. Italian seasoning
1/4 tsp. lemon pepper
1/4 tsp. cumin
1/4 tsp. sage
1/4 tsp. curry
1/4 tsp. Cajun spice seasoning
1/4 cup onion, diced
1/4 cup green or red bell pepper, diced
1 garlic clove, minced
1/3 cup yellow cornmeal
1/4 cup all-purpose flour
vegetable oil, for frying
Directions:
In a large skillet heat enough oil to coat the bottom of the pan.
In a large bowl add the salmon and remove the bones then flake with a fork.
Add beaten egg, seasonings, onion, and bell pepper stir to combine.
On a plate add cornmeal and flour and stir to mix, this is the coating for the salmon croquettes.
Form the salmon into patties and coat with the cornmeal mixture and place in the hot oil to fry.
Fry the salmon patties for 7 to 8 minutes, or until brown on one side then turn over to brown the other side.
Drain on paper towels and serve with rice and vegetables.
