Almond Toffee

Ingredients
  • 3 cups of white sugar
  • 6 sticks of salted butter
  • 3 cups of roasted, unsalted, slivered almond (optional)
  • 2 cups of semi-sweet chocolate chips
Instructions
  1. Melt butter until almost completely liquid in a large sauce pan over low to medium heat.
  2. Add sugar to butter and continue to heat slowly, stirring often (to prevent scorching in pan)
  3. Slowly raise the temperature of the butter and sugar (monitor with a candy thermometer) to 294F
  4. Once the sugar butter mixture has reached 294F remove from heat
  5. Pour Hot mixture into a large buttered pan
  6. Spread out mixture evenly, let it cool for 10 minutes
  7. Sprinkle chocolate chips onto toffee, let the toffee melt the chips
  8. Spread out melted chocolate chips with a butter knife or spatula
  9. Spread on chopped almonds, pack them onto the toffee with a glass
  10. Let cool to room temp, then put in the refrigerator until cold
  11. Invert pan of cool toffee onto another equally sized pan
  12. After toffee has popped out of pan, break into small pieces
  13. Enjoy and share your awesome English Toffee
  14. Store in the fridge or freeze for long term storage
