Ingredients
- 3 cups of white sugar
- 6 sticks of salted butter
- 3 cups of roasted, unsalted, slivered almond (optional)
- 2 cups of semi-sweet chocolate chips
Instructions
- Melt butter until almost completely liquid in a large sauce pan over low to medium heat.
- Add sugar to butter and continue to heat slowly, stirring often (to prevent scorching in pan)
- Slowly raise the temperature of the butter and sugar (monitor with a candy thermometer) to 294F
- Once the sugar butter mixture has reached 294F remove from heat
- Pour Hot mixture into a large buttered pan
- Spread out mixture evenly, let it cool for 10 minutes
- Sprinkle chocolate chips onto toffee, let the toffee melt the chips
- Spread out melted chocolate chips with a butter knife or spatula
- Spread on chopped almonds, pack them onto the toffee with a glass
- Let cool to room temp, then put in the refrigerator until cold
- Invert pan of cool toffee onto another equally sized pan
- After toffee has popped out of pan, break into small pieces
