Ingredients:
2 sweet potatoes
1/4 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1 egg, at room temperature
1/2 stick butter, at room temperature
1/2 cup of evaporated milk
1 cup granulated sugar
1 tbsp. pure vanilla extract
1 homemade pie crust
Directions:
Bake sweet potatoes until extremely soft 1 1/2 hours. Remove the sweet potato skin when potatoes are completely cooled down.
Combine the sweet potatoes and the rest of the ingredients in a standing mixer until it has a smooth consistency then pour in the pie crust.
Bake at 350 F. for 60 minutes (or longer to brown the crust). Let cool and serve.
