Recipe:
1 cup light brown sugar
1 cup (2 sticks) unsalted butter, softened
1 cup molasses
2 large eggs
5 cups unbleached all purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ginger
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves
1/2 teaspoon nutmeg
Sparkling sugar
Directions:
Cream the butter and sugar on medium speed until light and fluffy
Add the molasses and mix until combined
Add the eggs, one at a time, scraping the bowl in between each egg
Sift flour, salt and spices, add to butter mixture
Mix on low speed until dough forms
Split dough into two pieces, wrap in plastic and chill for one hour
Roll dough into 1/4″ sheets, chill for 30 minutes
Cut out shapesFreeze for 15 minutes
Bake at 350F for 10-12 minutes, rotate tray after 6 minutes
Allow to cool completely
