Pineapple Coconut Upside Down Cake

Ingredients:

6 tablespoons  butter (melted)
1/2 cup brown sugar
2 cans of pineapple 
3 large eggs
1 1/2 cups granulated sugar
1 teaspoon vanilla
A pinch of salt
3/4 cup coconut milk 
2 cups all- purpose flour
2 teaspoons baking powder


Melt butter and put in the bottom of a 8- inch cake pan add the brown sugar and pineapple.
In a large bowl add eggs and sugar and beat until pale in color and fluffy. Now add the vanilla and salt and stir in. Stir in the coconut milk until combined now carefully add the flour and baking powder and stir in until just combined. Now carefully pour this cake mixture on top of the pineapple and brown sugar mixture and the place in the oven and bake at 350 F. for 55 to 60 minutes. Let cool in cake for 10 minutes before flipping out tap the bottom of the cake pan to make sure all the pineapple comes out with the cake. Let completely before slicing. Enjoy!
