2 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1/2 cup lemon juice
4 eggs separated
Directions:
Beat 4 egg whites in another bowl till they are stiff but not dry
In a bowl place flour, baking powder and salt and stir.
Cream butter in mixing bowl with granulated sugar till creamy and fluffy.
Add egg yolks beat until light and combined.
Gradually start adding lemon juice with dry ingredients till all blended don't over mix.
Now fold in eggs whites. Fill paper liner 3/4 Bake at 375 15-20 minutes
Cool on wire rack for 5 minutes
12-14 muffins depending on size
