Grandma's Lemon Loaf

Ingredients:
  • 1 cup plus 2 tbsp all purpose flour
  • 1 tsp. baking powder
  • 2 eggs
  • 4 tbsp. melted butter
  • 1 tsp. lemon zest
  • 1/2 cup sour cream
  • 3/4 cup sugar
  • 1 tbsp. vanilla extract
Lemon Glaze:
  • 1 cup powdered sugar
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest
Directions:
  1. Preheat oven to 400 F.
  2. Place some parchment paper and grease a  8 1/2 x  by 4 1/4 by 2 1/2 inch loaf pan, set aside. 
  3. In a bowl, sift the all purpose flour and baking powder and set aside
  4. In a separate bowl, mix the sugar, lemon zest, eggs, sour cream, vanilla extract, and melted butter
  5. Pour the wet ingredients into the dry ingredients and mix together
  6. Pour the batter into the loaf pan and bake for 15 minutes
  7. Remove the cake after 15 minutes and cut cake down the middle 1/4 deep
  8. Return to oven and bake at 350 F. for an additional 25-30 minutes.
  9. To make the lemon glaze, combine the powdered sugar, lemon juice, and lemon zest.
  10. Pour the lemon glaze over the lemon loaf and Enjoy!
