Ingredients:
- 1 cup plus 2 tbsp all purpose flour
- 1 tsp. baking powder
- 2 eggs
- 4 tbsp. melted butter
- 1 tsp. lemon zest
- 1/2 cup sour cream
- 3/4 cup sugar
- 1 tbsp. vanilla extract
Lemon Glaze:
- 1 cup powdered sugar
- 2 tbsp. lemon juice
- 1 tsp. lemon zest
Directions:
- Preheat oven to 400 F.
- Place some parchment paper and grease a 8 1/2 x by 4 1/4 by 2 1/2 inch loaf pan, set aside.
- In a bowl, sift the all purpose flour and baking powder and set aside
- In a separate bowl, mix the sugar, lemon zest, eggs, sour cream, vanilla extract, and melted butter
- Pour the wet ingredients into the dry ingredients and mix together
- Pour the batter into the loaf pan and bake for 15 minutes
- Remove the cake after 15 minutes and cut cake down the middle 1/4 deep
- Return to oven and bake at 350 F. for an additional 25-30 minutes.
- To make the lemon glaze, combine the powdered sugar, lemon juice, and lemon zest.
- Pour the lemon glaze over the lemon loaf and Enjoy!
