Ingredients:
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon vanilla extract
1 large egg
1 cup all purpose flour
1/4 cup natural cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup dark chocolate chips (or milk/semi sweet)
1/2 cup toasted, chopped walnuts (or pecans)
3/4 cup shredded coconut
Preheat oven to 350 F. Cream together in the bowl of an electric mixer the butter and sugars until light and fluffy.
Scrape sides of bowl. Add the egg and vanilla and mix until well combined. In a medium sized bowl,
combine the flour, cocoa, baking soda and salt. Whisk together.
Add the dry mixture to the creamed mixture and mix just until combined.
Fold in the chocolate chips, nuts and coconut.
Scoop the dough with a 2-tablespoon sized cookie scoop onto parchment lined baking sheets.
Bake for 10 minutes. Makes 16 cookies.
