Cinnamon Walnut Muffins

Ingredients:

1 stick unsalted butter, softened at room temperature
1 cup granulated sugar 
2 eggs, at room temperature 
1 cup sour cream 
1 tbsp. pure vanilla extract
2 cups all-purpose flour
1 tsp. cinnamon 
1 Tbsp. baking powder 
1/4 tsp. salt 
3/4 cups chopped walnuts  

Topping: 

1/4 tsp. cinnamon 
1 tbsp. brown sugar 
1/4 cup chopped walnuts

Cream butter and sugar until fluffy, add eggs, sour cream and vanilla .Combine all dry ingredients till blended. Don't over beat Add nuts. Sprinkle topping over muffins. Bake at 350 for 25 minutes. Yields: 6 Jumbo muffins or 12 regular size muffins.
