Ingredients:
1 1/2 Cups Butter, melted
2 Cups sugar
6 eggs
1 Tsp. pure vanilla extract
3 Cups All Purpose flour
1 1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
3 Cups grated carrots
3/4 Cups Walnuts
1/2 Cup Butter, at room temperature
9 Ounces Cream Cheese
2 Teaspoons Vanilla
2 1/2 Cups Icing Sugar / Powdered Sugar
Preheat oven to 350 F. Line cupcake pan with cupcake liners. In a large bowl add melted butter and eggs and mix until well blended. Add sugar and vanilla extract and mix well. Add the dry ingredients and mix just until the flour is no longer visible. Now add the carrots and the walnuts mix just until combined. Use tablespoon cookie scoop and scoop out the batter for each cupcake and bake the cupcake for 18 to 22 minutes use toothpick to check to see if done in center of cupcake. let cool in pan completely. Add frosting and enjoy.
