Banana Coconut Muffins

Makes 24 Muffins

Ingredients:

2 1/2 cups all- purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 large eggs
4 very ripe bananas, mashed
1 cup coconut oil
1 1/2 cups granulated sugar
2 tsp. pure vanilla extract
1 cup sweetened shredded coconut (plus 1/2 cup shredded coconut for topping of muffins)

Preheat oven to 375 F. Spray muffin pan with cooking spray. Bake the muffins for 25 minutes or until golden brown.
