5 Bananas
2/ 1/4 Cups of All Purpose Flour (UNBLEACHED)
1/ 1/2 Cups White Sugar
2 eggs
1 stick of Unsalted Butter (Softened)
1/2 Cup Vegetable Oil
1 teaspoon of Baking Powder
1 teaspoon of Baking Soda
Less than 1/4 teaspoon of salt (Meaning fill the 1/4 teaspoon half way to the top of the spoon.
1/2 Teaspoon of Cinnamon
1/2 Teaspoon of Spice
Add 2 cups Chopped Walnuts
Step 1 in a Medium size bowl, Mash 5 bananas until it comes a creamy consistency. NOTE-You can increase to 6 Bananas if you like!
Step 2 Prepare and chop walnuts If you are using whole walnuts. Toast them in a Preheated 400 degree oven for about 7 minutes. Once done take out and let cool. Once Cooled take a large knife and chop walnuts into chunky bite sized pieces. Pieces should be smaller than a kernel of popcorn.
Step 3 in a large bowl, SIFT 2 1/4 Cups of All Purpose flour (UNBLEACHED)
Step 4 Add 1 teaspoon of Baking Powder, 1 teaspoon of Baking Soda, Less than 1/4 teaspoon of salt (Meaning fill the 1/4 teaspoon half way to the top of the spoon. 1/2 Teaspoon of Cinnamon and 1/2 Teaspoon of Spice. Mix all dry ingredients until combined. Set bowl aside to add wet ingredients into later
Step 5 In a medium size bowl add 1 stick of unsalted butter (Softened) and 1/ 1/2 Cups of white sugar. Mix until creamy and smooth. 4 minutes total.
Step 6 Add 2 eggs ONE at a time. Add the first Egg into the bowl and mix for 40 seconds then add the second egg in and mix for 1 minute.
Step 7 Add 1/2 Cup of Vegetable oil and blend for about 2 minutes or until creamy. Mixture should be creamy and thick with no visible oil.
Step 8 Add 1 teaspoon of Vanilla Extract and mix for 40 seconds
Step 9 Add Banana mixture and mix for 1 minute
Step 10 Add all dry ingredients into wet ingredients all at once. You can also alternate and add flour 3 separate times. MIX with large spoon DO NOT USE MIXER to blend. Mix until well incorporated.
Step 11 Add 1 1/2 Cups of Chopped Walnuts and fold in with spoon. DO NOT MIX with mixer.
Walnut Lovers add 2 cups of Walnuts
Step 12 Preheat oven to 350 Degrees
Step 13 Bake for 1 hour and 20 minutes
Step 14 Once out off oven insert toothpick in the center of the Banana Nut Bread and it should come out clean. If it does not come out clean place it back into the oven and bake for an additional 10 to 15 minutes.
Step 15. Cool for 4 hours. I recommend that you let it cool overnight. This will help the flavors increase!!!! :)
