Pistachio Cherry Chocolate Chip Cookies


Ingredients:

3/4 cup unsalted butter
2/3 cup dark brown sugar
2/3 cup granulated sugar
2 tbsp. light corn syrup
1 tbsp. cider vinegar or white vinegar
2 large eggs
1 tbsp. vanilla extract
1/2 tsp. salt
1/2 tsp. baking powder
1/4 tsp. baking soda
2 1/4 cup flour
2 cups dried cherries
1 cup pistachios, shelled
2 cups mini semi sweet chocolate chips

Preheat oven to 375 F. Cream together butter, sugars, corn syrup and vinegar. Beat in eggs and vanilla. In a medium bowl, whisk together salt, baking powder, baking soda and flour. Add to butter mixture and mix. Stir in cherries, pistachios and chocolate chips.

Drop cookie dough by tablespoonful onto baking sheet. Bake cookies for 10 minutes, then remove them from the oven and let them cool on the sheets for 5 minutes before moving them to a wire rack to cool completely.
