Peach Cobbler


serves 12

Bottom of the Pan
1/2 cup melted butter

Filling:

2 28 oz cans sliced peaches, drained
1 cup sugar
1/4 teaspoon cinnamon
2 teaspoon vanilla extract or 1 teaspoon each vanilla and almond extract

 Batter:

1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup room temperature milk
1 egg
1/2 teaspoon vanilla extract 

Preheat oven to 350 F. Mix filling ingredients in a bowl and set aside. Mix batter ingredients in another bowl and set aside. In a 9 x 13 pan pour in the melted butter. Over the butter spread the batter, but DO NOT STIR, now over the batter gently pour on the filling. Bake for 45 to 55 minutes. Let it cool off for about 1/2 hour before eating.
