Instructions for fry bread:
- Whisk the flour, baking powder and salt together. Combine milk and water in a separate cup.
- Add wet ingredients to flour mixture and stir with a fork to mix well. You will have a soft dough.
- Flour your counter top well with the remaining ¼ cup flour and coat your hands, too.
- Shape the dough into a cylinder and cut into 4 pieces.
- Pat each piece out into a circle about ⅓” thick (1 cm) and 6″ across.
- Heat the oil to 350F. and fry breads one at a time, for about 2 minutes on each side.
- Drain upright.
- Serve topped with beans, meat, cheese, and vegetables of your choice.
For the filling:
- Saute onion in about ½ teaspoon or oil (or use cooking spray) for 10 minutes over medium-high heat until translucent and slightly browned.
- Add cumin and chili powder and stir for 10 seconds.
- Add garlic, jalapeno, red pepper, and beef.
- Break the meat into large chunks and add water.
- Continue to stir the meat, breaking it into smaller pieces with the water.
- Cook over medium heat, stirring frequently, for about 5 minutes or until the meat is no longer pink.
- Add oregano and salt and simmer another 5 minutes to evaporate excess water.
